Here is an instant and easy to make recipe for sauerkraut that even though it is not fermented, it has all the apple cider vinegar benefits and it is as delicious as the traditional recipe!
1 Medium Cabbage
2 tsp. Sea Salt (check salt to taste)
2 Bay Leaves – Laurel Leaves
1 tsp. ground Mustard Seeds
5 Big Fat Peppers – Allspice
1 1/2 cups of Water
3 Tbs. Apple Cider Vinegar
Lemon Juice to taste (Optional)
1. Remove the outer dry and black layers of the cabbage. Shred cabbage and put it in a pressure cooker.
2. Add salt, water, apple cider vinegar, laurel leaves, ground mustard seeds and peppers. Mix.
3. Close the pressure cooker with its lid and cook at high temperature until it starts steaming. Put the pressure regulator and count 13 minutes. Turn the stove off and cool the pressure cooker.
