Baked Avocado and Egg / Baked Tomato and Egg

Perhaps, you have already seen this recipe since it is “In” these days. If you like baked avocado and baked eggs, this is your recipe! If that is not the case, you can substitute the avocado for tomato or Portobello. Besides, we are going to give it a twist to enhance its flavour and make it tastier.

INGREDIENTS
1 Avocado
2 Eggs
Salt and Pepper
Parmesan Cheese
Corn Crumbs
2 Bacon stripes,

1. Cut the avocado in half and remove the seed. Remove some of the avocado pulp, too. This will leave room for the egg. Salt and pepper.

2. Separate the white from the yolk of each egg and pour one white into each avocado half. Sprinkle some salt, pepper and crispy pieces of turkey ham or bacon. Top them with grated Parmesan cheese, corn crumbs and a few drops of olive oil leaving some space in the centre to add the yolk. Grill the avocados at high temperature for 5 minutes, or to taste.

3. Pour the yolk in the space previously left, cover it with more Parmesan cheese, corn crumbs and olive oil. Grill the avocados again for just one minute at very high temperature.

These instructions are for people who like their eggs with a fresh yolk. In case you prefer it well done, skip the two last steps of the recipe. Crack the whole egg into the avocado, add salt, pepper, crispy bacon, and top it all with Parmesan cheese, corn or breadcrumbs, and olive oil. Grill to taste.

Some people find the baked or grilled avocado flavour too strong. In this case, you can substitute the avocado for two big tomatoes or two Portobello mushrooms.

The tomato recipe is a lot lighter and fresher, but the three variations provide tons of protein and nutrients.
