GRAPEFRUIT AND RASPBERRY CHICKEN
This recipe is ideal for chicken, fish or pork.
2 Chicken Breasts or Fish or Pork Filets
250 ml Grapefruit Juice
1/2 Cup Raspberries
1/2 Lime (juice)
!/4 Cup Fresh Mint
Salt and Pepper to taste
1/4 Cup Fresh Berries
Sal and pepper the chicken breasts. Sauté the chicken breasts in a non-stick pan with olive oil until they have a beautiful golden colour.
Blend the grapefruit juice, lime juice, mint leaves, some salt and pepper, and the raspberries. Pour the mix into the chicken breasts and let it boil for a few minutes to reduce. Check the salt.
Serve the chicken breasts with all their juice over some fresh lettuce. Add avocado slices and some fresh berries, and top it with some fresh mint leaves. If you want, you can add a little more olive oil.
