Lemon and Orange Marmalade

INGREDIENTS
1/2 Cup Lemon or Lime Juice
1/4 cup Orange Juice
1/2 Cup Brown Sugar
1 Orange
3 Seedless Lemons or Limes
1 tsp. Grenetina (flavourless gelatin)
2 Tbs. Rum or Brandy
Boil the lemon juice, orange juice and brown sugar together to make a light syrup.
Peel the lemons and oranges avoiding the white part as much as possible, otherwise, the marmalade will turn up bitter. Shred the skin into thin stripes.
Take off the rest of the skin from the lemons and oranges.
Segment the orange and lemons. Segmenting removes all of the bitter white pith leaving just the pulp in full segments.
In a non-stick pan caramelized the skin stripes with a pinch of brown sugar.
Add the lemon and orange segments.
Soak the gelatin in 1/2 a cup of the syrup previously made. Microwave until completely dissolved. Mix together all the ingredients. Let boil at low heat without stirring for about 5 minutes, until it thicks. Finally, add the brandy.
Ready! Let cool down at room temperature.
Adding grapefruit and/or mandarin will enhance this recipe.
